before the industrial revolution, bread was hand made by skilled craftsmen or artisans. the skill and integrity of the artisan were reflected in the quality and character of the final product.

most of the bread consumed today is made by machines (that includes the imitation artisan bread sold at supermarkets). conditioners and other artificial additives are used to control a process that was once controlled by the skill of real bakers.

working on a very small scale, artisan bakers are once again using traditional methods and fresh, high quality ingredients to create honest-to-goodness, real bread.
