Cranberry Orange Olive Oil Cake with a Dark Chocolate Balsamic Glaze

Ingredients

For the Cake


1 ¾ cups all-purpose flour

1 cup granulated sugar

2 tsp baking powder

½ tsp salt

3 large eggs

¾ cup Baker & Olive Blood Orange Olive Oil

¾ cup whole milk

Zest of 1 orange

1 tsp vanilla extract

1 cup fresh or frozen cranberries (halved if large)

 

Glaze Ingredients

¾ cup powdered sugar

1½–2 tbsp Baker & Olive Chocolate Balsamic Vinegar

1–2 tbsp milk or cream (as needed for consistency)


Instructions

1. Preheat & Prep
Preheat oven to 350°F. Grease and line a loaf pan or 9-inch round cake pan.

2. Mix Dry Ingredients
In a large bowl, whisk flour, sugar, baking powder, and salt.

3. Combine Wet Ingredients
In a separate bowl, whisk eggs until smooth. Add olive oil, milk, orange zest, and vanilla. Mix until fully emulsified.

4. Make the Batter
Add wet ingredients to dry and gently stir until just combined. Fold in cranberries.

5. Bake
Pour batter into prepared pan. Bake 45–55 minutes, or until a toothpick comes out clean. Cool completely before glazing.

6. Glaze
Whisk powdered sugar with chocolate balsamic and enough milk to create a pourable glaze. Drizzle generously over the cooled cake.
